I was never a salad person and always thought that a bowl of greens is nothing but bland in taste and can never replace a meal. Whereas my husband always orders salad whenever we are out for lunch. Gradually looking at his colorful bowl of greens and veggies made me try once and I fell in love. Not with the salad though but with the dressing. I was very picky in choosing my salad so I opted for the Mexican grilled shrimp salad with cilantro avocado dressing. I must admit, the salad itself was good too, but the dressing made it even better.
So, I had to try to make this cilantro avocado dressing at home and it was so easy. You have to just blend the ingredients together and the dressing is ready. The best thing is you may spice up according to your taste buds. I love it a bit spicy so added few pieces of chopped jalapeno for that spicy kick.
This recipe is so versatile that you may use it in pretty much anything like in seafood, chicken or any other grilled meat, as a dip or as a dressing in salad or even as a spread in wraps or sandwiches. It has become my go to dressing for salads and specially as dip for tandoori chicken or kababs.

Tips:
You may store this dressing in a covered bowl or jar in the refrigerator for two days. If you do not have thick or Greek style yogurt you may hang regular curd for 2-3 hrs in a strainer and use in the recipe.

CILANTRO AVOCADO DRESSING
- YIELD: 1 cup
- PREP: 10 mins

INGREDIENTS
- 1 bunch cilantro/ coriander leaves washed and chopped
- 2 cloves garlic chopped roughly
- 1/2 medium jalapeno deseeded and chopped
- 1/2 small lime juiced
- 1 medium avocado scooped and skin removed
- 1/4 cup thick plain yogurt or greek yogurt
- 1 pinch salt or to taste
- 2-3 tablespoons water or more
INSTRUCTIONS
- Put all the ingredients in a blender jar or food processor and blend until smooth. Taste and adjust seasoning.
- Transfer the dressing to a glass or non-reactive jar or bowl and enjoy with your favorite grilled meat or in your salad!
