I love to try different cuisines as you know already but my all-time favorite is the Thai cuisine. As I have already mentioned in my earlier posts here that not only I love to try new dishes at the restaurants but I also want to recreate it in my kitchen. So when we had a scrumptious lunch at a Thai restaurant for a friend’s birthday party, this time I was all in for the Thai green curry . The light and soupy aromatic curry with fresh vegetables did not take too long to win my heart. I ended up having couple of servings with steamed white rice.Today’s recipe is Thai green curry paste at home.
So it did not take too long for me to try the curry at home and see whether it tasted just like the one at the restaurant. I made the Thai green curry paste at home this time as well as I am able to get the ingredients very easily and it always tastes better than the store bought ones. The paste is very aromatic with an undertone of spiciness.
The curry paste is very easy to put together. Just chop all the ingredients finely and blend in a blender. You may use the mortar and pestle to make the paste but that is definitely more time consuming. I do not use the shrimp paste, fish sauce or coconut milk in the curry paste itself. I use the ingredients once I prepare the curry. So the recipe is very simple. Give it a try and I will share a recipe with this green curry paste very soon.
Tips:
You may substitute some ingredients like lime leaves for lime rind, galangal for fresh ginger and shallots for small red onions but the flavor may differ slightly. You may store the curry paste in a clean jar for a week in the refrigerator or in the freezer for a month.

THAI GREEN CURRY PASTE
- YIELD: 8-10 Servings

The Thai green Curry paste is very aromatic with an undertone of spiciness. Use the paste in your favorite Thai dish or soup recipe.
INGREDIENTS
- 2 teaspoons whole coriander seeds
- 1 teaspoon whole cumin seeds
- 1/2 teaspoon black peppercorns
- 1 tablespoon coriander/cilantro stems finely minced
- 4 tablespoons lemongrass finely minced
- 1 1/2 tablespoons galangal finely chopped
- 8-10 large cloves of garlic finely chopped
- 2-3 small shallots finely chopped
- 4-6 small kaffir lime leaves chopped
- 5-6 Thai green chilies chopped
- 2 teaspoons salt
- 1 tablespoons brown sugar
- 2 tablespoons lime juice
INSTRUCTIONS

- Dry roast the whole coriander,cumin and peppercorn until it start to crackle. Grind in a grinder to form a powder. Set aside.
- In a blender jar add rest of the ingredients and blend to form a smooth paste. Taste for seasoning and adjust accordingly. Transfer to a clean and dry bottle. Thai green curry paste is ready to use.
- If you want to use a mortar and pestle start pounding the dry and hard ingredients and then move onto the wet ingredients. Use Thai green curry paste in your favorite dish or soup recipe.
