I was never into oatmeal for breakfast! Instead I preferred toast, eggs and fruits but after my trip to Kolkata this time my views totally changed. At my parents’ they have oats for breakfast almost every day and staying there for a month, I had no other choice than to give in. I was wrong! Oats taste great! Coming back, this oatmeal has now become my go-to breakfast during the weekdays. It is however a different story on the weekends. We take it easy and relax with a cup of tea until late in the morning and have brunch before we head out to run errands. Pancakes, waffles, eggs and toasts are what I prepare most on the weekends. This cherry and almond dutch baby pancake was prepared on one such weekend.
We love cherries and a big box is emptied in couple of days even before I could make something out of it. So before the cherries are gone from the stores, I prepared this delicious cherry and almond Dutch baby pancakes.
What is a Dutch Baby?
You can make this with berries or any other fruits of your choice. This Dutch baby is also known as German pancake. It is mildly sweet and it puffs up when you bake in the oven. It is fun to see it puffing up while baking but once it is out of the oven it is all wrinkly and ruffled up! A dusting of icing sugar is all you need but I drizzled some melted chocolate to make it extra special. Serve with a cup of coffee and you are good to go!
If you have some guests over it is easier to serve this rather than to flip regular pancakes for hours! It is done in one go and can feed quite a few people. It has a custard like texture in the bottom and topped with fruits and dusting of powdered sugar!
Tips:
You may bake the pancake in a muffin pan to serve as mini pancakes. While working with the cast iron pan, be very careful as it gets very hot in the oven! You may make the batter in a blender to ease the process.

CHERRY ALMOND DUTCH BABY PANCAKE

It is a baked pancake often called as German pancake.It tastes great,has a custard like texture in the bottom, fruit in every bite with dusting of powdered sugar.
INGREDIENTS
- 3/4 cup all purpose flour
- 3 large eggs
- 2 tablespoons granulated sugar
- 1 pinch salt
- 1 teapsoon vanilla extract
- 1-2 drops almond extract
- 3/4 cup milk
- 4 tablespoons butter
- 2 cups fresh cherries pitted
- 1/4 cup sliced almonds toasted
- 1/4 cup icing/powdered sugar for dusting
- 2 tablespoons chocolate melted to drizzle on top
INSTRUCTIONS
- Pre-heat the oven to 425F. In a large bowl whisk together the flour, sugar,salt,eggs and milk to form a batter. It is ok if the batter is a little lumpy. Add the extracts and mix well.
- Heat a cast iron pan at medium low and melt the butter. Add the cherries and cook for couple of minutes. Switch of the heat. Pour in the batter and transfer the pan carefully into the pre-heated oven. Bake for 15-20 minutes or until the pancake is slightly golden brown at the edges and puffed up.
- Remove the pancake from the oven on to a cooling rack. Garnish with toasted almonds. Dust with powdered sugar and drizzle melted chocolate on top.
- Cut into wedges and serve hot. Enjoy!
