I love summer for a reason! This is the time when I can indulge in frozen treats to my heart’s content. For me, it is never enough to have ice-cream or fro-yo after a meal or even as a snack! Crazy right? I can even skip a meal just to have a bowl of my favorite frozen dessert! When I am in a store to pick up a cup or two, I’m in a great dilemma. I cannot pick just one from a huge array of flavors! I feel stressed! So I have stopped going to the super market to get my frozen treats, instead I make at home which ever flavor I am in a mood to indulge! This raspberry dark chocolate frozen yogurt is now my current favorite.
What is Frozen Yogurt?
I love frozen yogurt. It is lighter, made with yogurt base so a bit healthier than the ice cream and if you make at home you can control the sugar and the ingredients which makes it even better! In this Raspberry dark chocolate frozen yogurt flavor of raspberry compliments the bitter sweet taste of the dark chocolate and who doesn’t love the rich pink color of the yogurt speckled with dark chocolate chunks?
The recipe is very easy to make and hardly takes any effort or time. If you have an ice cream maker, the recipe gets even easier. It has only four real ingredients! No corn syrup, no artificial flavors and no added colors. How easy it could be?

Tips:
If you are not using an ice cream maker follow the instructions given. Use a metal container with a lid to set the frozen yogurt. Use sugar in the recipe as per taste or the sweetness of the berries. The berries I have used were quite tart.

RASPBERRY DARK CHOCOLATE FROZEN YOGURT

INGREDIENTS
- 2 cups thick plain yogurt may use Greek yogurt
- 2 cups raspberries fresh or frozen
- 1 cup granulated sugar
- 1/4 cup dark chocolate chunks
- 1/4 cup fresh raspeberries for topping /garnish
INSTRUCTIONS

- Transfer yogurt,raspberries and sugar in a blender or a food processor and blend until smooth.
- Pass the mixture through a strainer to discard the raspberry seeds. Transfer the mixture to an ice cream / frozen yogurt machine and freeze according to the manufacturer’s instructions.
- At the last stage of freezing add the chocolate chunks. When done, transfer to a freezer safe bowl, cover and freeze until firm. You may serve as a soft serve without further freezing.
- If you do not have an ice cream/ frozen yogurt machine then freeze the blended mixture in a freezer safe bowl. After two hours take the mixture out from the freezer . You will notice the mixture has started to solidify. Break the ice crystals with a help of a fork and cover and let it set again in the freezer for couple of hours.
- Repeat the process for few more time. At the last stage add the chocolate chunks and leave it to freeze finally.
- When the frozen yogurt has set finally take out from the freezer and leave on the kitchen counter for couple of minutes before serving. Serve in individual cups or bowl and top with some fresh raspberries. Enjoy after a meal as a dessert!
