This is a quick and easy chicken and cheese sandwich recipe which I usually prepare on the go. This recipe comes handy whenever I do not have much time to prepare my lunch on the weekdays or whenever we are out for a short drive. The sandwich tastes delicious with all the veggies, cheese and chicken. I prepare mostly with homemade Sandwich bread with honey and oats and it tastes even better.
This chicken and cheese sandwich is so easy to prepare that you need no recipe. Use whatever vegetables you prefer and add in to the sandwich. These are the vegetables I like to use and often have in hand. You may add any spread of your choice but the chipotle mayo gives a spicy kick to the recipe and I love it. The sweet taste of the honey mustard compliments the spiciness of the chipotle chicken and brings a perfect flavor to the sandwich.
You may use leftover grilled chicken pieces and that will taste great too. The crunch of the fresh vegetables and the spicy taste of the chicken with the sweet and spicy spread makes the sandwich a perfect lunch option! EASY CHICKEN AND CHEESE SANDWICH

This chicken and cheese sandwich is a on the go recipe for lunch.
INGREDIENTS

- 4 slices homemade honey and oats sandwich bread or store bought
- 1/2 lb deli style chicken slices I used the chipotle chicken breast
- 2 slices provolone cheese or any sliced cheese of your choice
- 1/2 medium red onion
- 1/2 medium cucumber
- 1 small tomato
- 2-3 leaves romaine lettuce
- 2 tablespoons honey mustard or any spread of your choice
- 2 tablespoons chipotle mayonnaise or any spread of your choice
- pinch of salt optional
- pinch of black pepper powder optional
INSTRUCTIONS
- Thinly slice the cucumber,onion and tomato and set aside. If you want you may sprinkle some salt and pepper.
- Take two slices of bread and apply mayonnaise and honey mustard on each slice. Now place the sliced onion, cumber,tomato, sliced chicken, cheese and leaves of lettuce on one slice of bread. Cover with the other slice and press down gently. Repeat with the other two slices of bread.
- Cut into halves and serve immediately. Enjoy!
