I am back after a long hiatus. Last month I returned home from a vacation to India and since then I have been tied up in so many personal stuffs that could not make time to pen down here. I truly missed this space and can’t wait to share new recipes here. I have been working on new recipes for the last few days. Today I am here with a new recipe shrimp and vegetable stir-fry perfect for the season.
We are still enjoying the last few days of spring here. The weather is beautiful. The days are a bit warm but the nights are cool. Perfect time to indulge in some fresh crisp vegetables and fruits. Spring and Summer here brings in bounty of fresh vegetables and fruits. These fresh vegetables when lightly sautéed or stir fried brings out great flavor and taste.
While I was busy settling down after the long vacation, I was always into preparing quick and one pot meals for dinner which is easy to make and delicious and satisfying at the same time. This shrimp and vegetable stir-fry is one of such dishes that we enjoy at least once a week with some steamed rice.
This recipe is fast to cook. Chinese cooking is mainly done in high heat. So for that you need all your ingredients ready and prepped ahead of time. The recipe is quite simple and easy and it comes out prefect every time when you are not in a mood to cook an elaborate menu during weeknights. Tips:
Sometimes I add some boneless chicken pieces or tofu in place of shrimps. You may add any vegetables of your choice. Baby carrots, baby bok-choy, baby corn and cabbage also go well with this recipe. Cooking the vegetables right is the key to this recipe. The vegetable should be tender yet crisp to the bite.

SHRIMP AND VEGETABLES STIR-FRY
- YIELD: 2 Servings

The fresh crisp vegetables with charred, succulent shrimps fit perfect for the weeknight menu with a side of steamed brown rice. A complete meal.
INGREDIENTS
- 1 pound raw shrimps cleaned and deveined
- 1 medium onion thinly sliced
- 3-4 cloves of garlic minced
- 1 medium carrot peeled and sliced
- 1 small head of brocolli cut into florets
- 8-10 medium snow peas washed and trimmed
- 1 small red bell pepper thinly sliced
- 10-12 small mushrooms sliced
- 1 tablespoon white oil
- 2 teaspoons light soya sauce or to taste
- 1 tablespoon oyster sauce
- 1-2 drops sesame oil
- 1 pinch salt optional
- 1/4 cup bean sprouts for garnish
INSTRUCTIONS

- Heat oil in a wok at medium high and add the sliced onions and minced garlic. Stir for few seconds until aromatic. Next add the shrimps and give a quick stir. Add the broccoli florets, mushrooms, sliced red bell pepper and snow peas. Stir well.
- Next add the sauces and a dash of sesame oil and mix well so that the veggies are well coated.
- Cover the wok for just couple of minutes or until the veggies are a bit tender and the shrimps are cooked through. Do not overcook the vegetables. Check for seasonings and adjust accordingly.
- Give a final mix and transfer to a serving platter. Garnish with bean sprouts. Serve hot with a side of steamed brown rice.

Sonali, forgive me; I am just a little bit puzzled. Are you trying to say that this was your very first visit to Kerala???? And if the answer is “yes”, then I can only say OMG 🙂 Apart from outsiders of course, its the people from up North who come down in drove, honeymooners in particular. As one of my friends from Jaipur said “…because everything is soooo green…”

Sadly sadly, that so-called ‘catchphrase’ “Kerala-God’s own country” has been over the years dreadfully misused (in my opinion) – a great shame. Every time I visit especially Europe, from where a large number of tourists come to us, I always have some explaining to do re this phrase – to people who watch the news on TV and read newspapers!!!!! I will never get involved in religious nor political discussions – so, personally I insist on calling our beautiful Kerala by its rightful name “Kerala – the beautiful land of Coconuts, Spices, Backwaters and so much more!” and when I am abroad, just anywhere in the world for that matter, I am happy to come “home” – flying low over the land approaching Cochin (Kochi) airport I always have that certain lump in my throat.
