It is Christmas Eve here and I am waiting eagerly for the Santa Clause to bring me gifts. I want to still believe in this fairy tale, Santa visiting at night, travelling places on his reindeer and gifting children who had been nice the whole year. As a child this was the story I always listened to with wonder and awe in my eyes, while sitting on my dad’s lap. I used to be quite skeptical. Sometimes I reviewed myself as whether I would be entitled for Santa’s gifts. I would be so pleasantly surprised the next morning to see a gift neatly wrapped by my bed side. I still miss those days so much and wish that I was still my dad’s little darling. So tonight I have baked for Santa a batch of these chocolate crinkle cookies.
These chocolate crinkle cookies when baked have a characteristic cracks and crinkles on top. It is beautiful to look at. The cookies are soft and chewy almost like a brownie,sweet and chocolaty.
The cookie dough should be rested for couple hours before it goes to the oven. The recipe is quite simple and the cookies turn out great.

Tips:
The cookies stay fresh in an airtight container for couple of days. You may store the dough in the refrigerator for 1-2 days before baking.

CHOCOLATE CRINKLE COOKIES

The cookies are soft and chewy almost like a brownie , sweet and chocolaty.
INGREDIENTS
- 1 cup all purpose flour
- 2/3 cup granulated sugar
- 1/2 cup cocoa powder
- 1/4 cup unsalted butter at room temperature
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 2 large eggs at room temperature
- 1-2 drops vanilla extract
- 1/2 cup icing/powdered sugar
INSTRUCTIONS

- In a medium bowl whisk together all the dry ingredients except sugar and set aside.
- In a large bowl with an electric beater, cream together the softened butter and sugar until light and fluffy, Add the vanilla extract and eggs and beat again until smooth.
- Now add the dry ingredients and mix well with a spatula until it forms like a dough. The dough should be very moist and sticky but it is fine. Cover the bowl with a cling wrap and transfer it to the refrigerator for at least 2 hours.
- Pre heat the oven to 350F and line 2 baking sheets with parchment paper. Transfer the powdered sugar onto a plate.
- Using a tablespoon, scoop out a portion of the dough and roll between your palms to form balls. Roll the balls in the powdered sugar to coat completely. Place the dough balls on the prepared cookie sheet leaving some space in between.
- Bake for 10-12 minutes at a pre-heated oven. Transfer the cookie sheets on to a wire rack for 5 minutes and then transfer the cookies onto the wire rack to cool completely.
- Serve with milk,coffee or hot chocolate. Enjoy!
