The Labor Day is the unofficial end of summer which is just a couple of days ahead. It feels sad the summer is coming to an end. Though I love the Fall and Winter but the long bright days of summer make me happy and energetic. I made a list of things to accomplish this summer. I succeeded in few and rest are left for the next year. Today’ recipe is sweet and spicy chili pepper jam.
This is a very easy recipe to make and enjoy during the last few days of summer. This Sweet and Spicy Chili Pepper Jam may be slathered on a roasted corn or added on tacos and wraps or may be served as a dip with some crackers. The possibilities are endless.
The jam tastes yummy and in whatever way you use it is a crowd pleaser. If you have a jar handy you have already won half the battle of hosting a party. Tips:
If red Jalapenos are not available then you may use red bell peppers but in that case you may have to add few hot red chilies to bring the spiciness in the jam. To know whether the jam is ready add a few drops of jam onto a chilled plate and run your finger through it. If the jam leaves a trail then you know its ready.Always cool the jam and then transfer it to a clean jar. The jam can be stored in the fridge for a month.

SWEET AND SPICY CHILI PEPPER JAM

INGREDIENTS
- 1 pound red jalapenos
- 1 teapsoon cayenne pepper optional
- 1/2 cup apple cider vinegar
- 3-4 medium cloves of garlic finely minced
- 1 cup granulated sugar
- 1 pint glass jar cleaned and dried
INSTRUCTIONS

- Stem and de-seed the jalapenos.If you want a spicy kick to the jam then reserve some seeds. Chop the jalapenos finely and set aside.
- In a saucepan combine together vinegar,sugar,finely minced garlic and bring to a boil. When the sugar starts to dissolve add the finely chopped jalapenos,reserved seeds and cayenne pepper if using. Continue to cook for 15-20 minutes or until the mixture thickens to a jam like consistency.
- Remove from heat. Let the jam cool completely. When the jam is completely cooled transfer it to a jar. Enjoy on your roasted corn or serve as a dip with some homemade crackers.
