After a long time I am back again. Few things have changed since my last post. We have moved to a new place so things are pretty crazy here. Packing and unpacking the boxes was taking most of our time for the last few weeks. Finally we are settled in and back to our normal schedule. In between there have been few changes in our website as well. Today I am back with a frozen treat, peach sorbet!
Summer is now at its full peak. Days are quite hot and humid in my part of the world. With all these moving, packing and unpacking in these hot days the only thing that we were craving was something cold. Last Sunday I went to the farmers’ market and brought home some really sweet peaches. I went ahead and made for us some peach sorbet to keep us cool.
Sorbet is a light and tastes fresh and you can only taste the fruit which is great. You may use any fruit of your choice which is in season. The recipe is very easy and simple with very few ingredients. You may adjust the amount of sugar in the recipe depending on the sweetness of the fruit. The peaches I have used here were very sweet so have used less sugar. This tastes fantastic and has a velvety soft texture and tastes just like the peaches. The lemon brings out the flavor even more. If you are in a mood for some light frozen treat then this one is for you. Give it a try and enjoy the summer!
Tips:
If the peaches are too soft to peel you may blanch them. To blanch, make cross with a sharp knife at the bottom of each peach and blanch them in hot water for couple of minutes. Drain and transfer them into ice cold water. Take them out and you’ll be able to peel them very easily. If the peaches are not too sweet you may increase the amount of sugar. In that case increase the amount of water as well. To make simple syrup the amount of water and sugar should be same.

PEACH SORBET

INGREDIENTS
- 5-6 medium peaches
- 1 large lemon
- 1/4 cup granulated sugar
- 1/4 cup water
- few sprigs of fresh mint
INSTRUCTIONS

- First prepare the peaches. Wash and peel the peaches and chop into small pieces. Juice the lemon and keep aside.
- Next prepare the simple syrup. To make the simple syrup mix the sugar and water in a saucepan and heat till the sugar is dissolved completely. Take it off the heat and cool completely.
- In a blender add the chopped peaches,juice of one lemon and the simple syrup and blend well. Pour the mixture in a glass or metal container, cover with a plastic wrap and chill in the freezer for 2 hours.
- After two hours take the mixture out from the freezer . You will notice the mixture has started to solidify. Break the ice crystals with a help of a fork and cover and let it set again in the freezer for couple of hours. You may repeat the process few more times before the final setting to avoid ice crystals forming in the sorbet. You may avoid all these steps if you use an ice cream maker and follow the manufacturer’s instructions.
- When the sorbet has set completely, take the container out from the freezer and let it sit for few minutes before serving. Scoop in some sorbet in a cup and garnish with few sprigs of mint. Enjoy!
