Since long I wanted to visit a berry farm and pick berries on my own. This year my wish was fulfilled and we went on a day trip to a berry farm not very far from our house. We picked tons of strawberries, blueberries and some blackberries. The strawberries were so fresh and sweet that we had more than half in first two days but were left with lot more. I made breakfast smoothie with the rest but some were still left with which I made these strawberry crumb bars.
These strawberry crumb bars came out so well. They were crispy on the outside but soft and gooey inside. Perfect with a scoop of vanilla ice-cream or whipped cream.
These bars not only tasted good but was very simple and easy to prepare. This summer give this recipe a shot and I am sure you’ll love it.
Tips:
You can mix the crumb in a food processor. Simply just pulse couple of times to form a crumb like mix. You can substitute strawberries with any other fruits of your choice. Stays well for couple of days but tastes best on the day of baking.

STRAWBERRY CRUMB BARS

These bars were crispy on the outside but soft and gooey inside. Perfect with a scoop of vanilla ice-cream or whipped cream. Yum! They are very easy to prepare as well.
INGREDIENTS
- 1 pound fresh strawberries chopped
- 2 tablespoons cornstarch
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/8 teaspoon salt
- 3/4 cup granulated sugar divided
- 1/2 cup unsalted butter cold and cut into cubes
- 1 large egg
INSTRUCTIONS

- Pre-heat the oven to 350F and grease a9x9 square pan with butter and line with a parchment paper. Grease the parchment paper as well.
- In a bowl combine the flour,1/2 cup sugar, salt and baking powder. Mix well the dry ingredients. Now add in the cold cubed butter and egg and with the help of a knife or a pastry cutter mix in with all the ingredients until fine crumbs form.
- In a separate bowl add the chopped strawberries, remaining 1/4 cup sugar and cornstarch and combine to coat the strawberries evenly.
- Pour 2/3 rd of the crumb mixture in the prepared baking pan and press firmly into the bottom. Pour strawberry mixture over top and top with the remaining crumbs. Bake in the oven for about 40-45 minutes.
- Let it cool on a wire rack and then cut into squares. Serve warm or at room temperature with a scoop of vanilla ice cream or sweetened whipped cream.
