I wanted to bake this cake since a long time and I got the perfect chance when Ruth from The Crafts of Mommyhood challenged us to bake a cake for the July’s Daring Bakers’ Challenge. But not just any cake; she asked us to add in a special surprise for our eyes as well as our taste buds. So I took this opportunity to bake a Zebra Cake. This cake has got such a fun pattern of chocolate and vanilla stripes as in a zebra. When you bite into it you taste both the vanilla and the chocolate which pleases your taste buds at once.
The recipe is very simple and basic but tastes great. The uniqueness of this recipe is the pouring of the batter. It is a bit time consuming too but the end result is worth the wait. This recipe has been adapted from King Arthur Flour.
Tips:
If you want you may skip the frosting. In that case, add ½ cup of sugar to the recipe. While pouring the batter to the pan be very careful otherwise the striped pattern may not come out clean. To represents the stirpes of the zebra I have used two flavors but you may use any other flavor or color. I have split the cake batter into a 6″ and 4″ cake pan.

ZEBRA CAKE

The cake has got such a fun pattern of chocolate and vanilla stripes as in a zebra. When you bite into it you taste both the vanilla and the chocolate which pleases your taste buds at once.
INGREDIENTS
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 2 teaspoons baking powder
- 3 tablespoons cocoa powder
- 4 large eggs
- 1 cup vegetable oil
- 1 cup milk
- 1 teaspoons vanilla extract
INSTRUCTIONS

- Preheat the oven to 350°F. Lightly spray a 9″ x 2″ round baking pan with cooking spray and line it with a parchment paper. Grease it well and set aside.
- In a bowl with a whisk mix together the sugar and eggs until lightened. Add the oil, milk and vanilla and mix until well combined and smooth.
- In a separate bowl, sift the flour, baking powder and salt. Add the dry mixture to the wet ingredients. With a spatula combine the dry ingredients to the wet ingredients until the batter is smooth and lump free. Scrape the sides of the bowl as needed.
- In a medium bowl transfer 2 cups of the batter and add the cocoa powder. Be sure to sift the cocoa powder to avoid any lumps in the batter. Combine well.
- To get the stripes, spoon 2 tablespoons of vanilla batter into the center of the cake pan. Next spoon 2 tablespoons of chocolate batter into the center of the vanilla batter. Continue the process with alternating batter until all the batter is used.
- Bake the cake in the pre heated oven for 40-45 minutes or until a toothpick inserted into the cake comes out clean. Once done, cool the cake in the pan for 10 minutes and invert it on a wire rack to cool completely.
- Frost the cake as desire with buttercream frosting. Cut a slice and surprise yourself with the vanilla chocolate stripes. Enjoy!
