A very happy new year to all my readers and bloggers. A new year, a new beginning and a new beginning calls for something sweet. This Black Forest Cake was in my draft folder for quite some time and was looking for some good reason to post. To make a sweet start of the year, this was the right moment but I have one more good reason to celebrate.
It is a celebration time since it’s the birthday of my very sweet sister and my best friend. We have been knowing each other for more than a decade now and each day our friendship is growing stronger than ever. Her presence in my life made me complete as I always longed for a sister who would be my best friend and there she came as an elder sister, caring, loving and very soft at heart, my sweet sis-in-law my Boumoni.
We have great memories together and now miles apart we chat over the phone and share the same bond. She is beautiful in and out and I love her for her simplicity and innocence.
This Black Forest cake is my husband’s favorite. This is a layered chocolate sponge cake with whipped cream frosting and sweet cherry filling. You can make your own or get the canned cherry filling. The cake is then topped with some shaved chocolate and some more cherries as garnish. It is soft, moist and not very sweet. A bite into it literally melts in the mouth.
Tips:
You can use the canned cherry filling available in the market but the freshly made ones taste better. Before whipping the cream place the bowl and the beater in the refrigerator for at least 3o minutes. That way it will be easier to beat. The recipe is for a 9 inch cake but I have used a 6 inch pan and it is perfectly fine. Keep the finished cake in the refrigerator for at least an hour before serving. The cake tastes best the next day when the flavors have matured well. Store the cake in the refrigerator.

BLACK FOREST CAKE

This is a layered chocolate sponge cake with whipped cream frosting and sweet cherry filling.The cake is then topped with some shaved chocolate and some more cherries as garnish. It is soft, moist and not very sweet .
INGREDIENTS
- 1/2 cup all purpose flour
- 1/3 cup unsweetend coco powder
- 1/4 teaspoon salt
- 3 large eggs
- 1/4 cup unsalted butter melted
- 1 cup granulated sugar separated
- 1 teaspoon vanilla extract
- 1 cup fresh cherries pitted
- 2 tablespoons cornflour
- 21/2 cups heavy whipping cream cold
- 3 tablespoons granulated sugar
- 1 tablespoon vanilla extract
- 1/2 cup chocolate shavings
- 8-10 maraschino cherries for garnish
INSTRUCTIONS

- Pre-heat the oven to 350 F and line a 9 inch baking pan with parchment paper and grease it well.
- For the cherry filling: In a saucepan take the cherries, sugar, water and the corn flour and two tablespoons of water. mix well and let it simmer until the sugar is dissolved and the liquid thickens. Remove from heat and set aside.
- For the simple syrup: Add 1/4 cup of sugar and equal amount of water in a saucepan and heat until the sugar is dissolved. Remove from heat and let it cool.
- For the chocolate sponge: Sift the flour, salt and coco powder together in a bowl and set aside. In another bowl add the eggs and 1/2 cup sugar and with an electric beater beat until the egg sugar mixture becomes thick and pale yellow(approx. 5minutes). Add the vanilla and the melted butter and mix in well.Now carefully fold in the dry ingredients with the wet mixture. Pour the cake mixture into the prepared pan and bake it for 20-25 minutes or until toothpick comes out clean. Remove from oven and cool.
- Whipped cream frosting: In a bowl place the cooled whipping cream, remaining 1/4 cup sugar and vanilla extract and beat until stiff peaks form. Keep the bowl in the refrigerator until needed.
- When the cake is cooled down completely, slice the sponge into two horizontal layers. On a serving plate place the bottom slice and brush the cake with the simple syrup. Add some whipped cream and cherry filling and place the second slice on top. Similarly brush the top layer with the simple syrup and cover the whole cake with whipped cream.
- In a piping bag place the remaining whipped cream frosting and with a star tip make some rosettes . Decorate with chocolate shavings and maraschino cherries on top.
