We don’t want anything upside-down in our lives. We like to see things going according to plans. However there are times when things go really bad and we are left with no other choice. Sometimes we are helpless in the hands of Nature; other times we are the victims of terrorism or political and religious fanaticism.Even we are the silent spectators of economic slowdown or share market crash. We want things to be upright as soon as possible. In a happy note there are few things in life that we enjoy being upside-down and one of them is the Pineapple Upside-down cake. These sweet little things in life get us going.
My family is very fond of fruits. Come summer and the variety of fruits that show up in the produce section make my heart sing. Every time I bring home fruits with some recipe in mind, they are gone by the time I could even reach for other ingredients. When I came through this recipe on a television show I was inspired to give it a try and I am glad that I did. It is a classic dessert.The pineapple upside down cake came out buttery and moist and with the caramel it tasted absolutely delicious.This is a real treat to the taste buds. It is an easy recipe and you can win hearts in no time.
Pineapple Upside-Down Cake:
Recipe: Makes one nine inch cake
Recipe inspired from foodnetwork channel
- 1 ½ cups Cake flour
- ½ cup softened butter
- ¼ cup melted butter
- 1 cup granulated sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 ½ teaspoon baking powder
- A pinch of salt
- 1 cup buttermilk
- 1 cup firmly packed brown sugar
- 1 can of pineapple slices well drained
- 1 can of Cherries.
Preheat the oven to 350F and spray a nine inch round baking tin with non-stick spray.
In a small bowl combine the flour, baking powder and salt and set aside. In a large bowl beat the butter and sugar with a hand held mixer until creamy and smooth. Add the eggs one at a time and mix till everything is well incorporated. Next add in the vanilla.
Now add the flour mixture into the egg mixture alternately with the buttermilk, beginning and ending with the flour mixture.
Now put the brown sugar evenly into the pan and pour in the melted butter. Arrange the pineapple slices and cherries over the brown sugar. Pour the batter over the pineapple slices and bake till a tooth pick inserted in the center comes out clean, about 35-40 minutes.
Let the cake cool in the pan for 10 minutes. Invert the cake onto a wire rack to cool completely.
Enjoy as is or with whipped cream or ice cream.
To make buttermilk at home add 1 tablespoon of white vinegar to a cup of milk at room temperature.Set aside for five minutes.You will see the milk getting curdled.Buttermilk is now ready to use.If you don’t have cake flour place two tablespoon of cornstarch in one cup and fill the rest with all-purpose flour.You will get one cup of cake flour.Remember to invert the baked cake just after ten minutes or else the caramel will harden and stick to the pan.
